Apricot Dijon Glazed Chicken

Crispy baked chicken thighs glazed with Oregon Grower's Apricot Jam. Served on a serving pan with green beans.

COOK TIME: 30 minutes

Ingredients:

Preparation:

  1. Preheat oven to 400F.
  2. Rinse chicken thighs, pat dry, and transfer to a baking dish.
  3. Season thighs with salt and pepper.
  4. Bring jam and mustard to a simmer in a small saucepan over medium heat.
  5. Reduce heat to medium-low, simmer 5 minutes.
  6. Spoon apricot mixture over chicken thighs, spreading with back of spoon to coat evenly.
  7. Bake chicken, basting with sauce from bottom of dish every 10 minutes, until thighs reach internal temp of 170 - about 30 minutes
